The construction of our first wood-fired oven was a game changer. We perfected the technique to achieve the exact cooking point and the unmistakable flavor that defines us. Our wood-fired oven is the secret of our cuisine. This traditional cooking method allows us to achieve unique flavors and textures in our dishes that you won’t find anywhere else.

Artisanal Process
At Casamitjana, we cook as we did in the past, but for today’s world. Our meats are crafted through a slow, artisanal, and 100 % natural process: We select high-quality meats – beef, pork, chicken… – from trusted, local sources. We cook them over a wood fire, at low temperature, for hours. Natural smoke and time work their magic. We add nothing artificial – no additives, no preservatives, no colorants. Only EVOO, salt, spices, and great respect for flavor. We vacuum-pack them for safe preservation, maintaining texture and taste.
